All-Russian Scientific Research Institute оf Butter and Cheesemaking (VNIIMS) conducts basic and applied researches in the field of development of scientific foundations for creating technologies of butter- and cheesemaking products, including: hard, semi-hard, soft, and processed cheeses, butter and butter spreads from cow milk, milk-containing products with milk fat replacers, produced according to the technology of butter and cheese; as well as technologies of functionally necessary ingredients - bacterial concentrates and enzyme preparations; technologies of products from secondary dairy raw materials; provides technological support in the study of cheese and butter production; develops interstate and national standards, enterprise standards, technical specifications and technological instructions; considering individual manufacturing environments; tests new packaging materials and ingredients for butter-and cheesemaking products; performs standardization of industry-specific rennet samples; deals with the organization of effective technical and microbiological control; produces nutrient medium and methods of control of microbiological indicators for the dairy industry; evaluates the quality of raw materials, ingredients and finished dairy products for its compliance with the established requirements; carries out the courses for employees of dairy products industry; conducts training of highly qualified personnel in postgraduate study; provides scientific and technical support and consulting assistance for the enterprises of dairy products industry.
